John Nguyen launched Chicago Lunchbox in 2013 as the first cook on board food truck in Chicago. The menu consists of traditional Asian dishes such as Korean Galbi Beef and Vietnamese Grilled Pork served in unique ways. The business quickly expanded from vending on the streets of Chicago to traveling to different cities, participating in a variety of special events and catering for numerous companies and private events. The success with the business has proven to be great and Chicago Lunchbox opened its first brick and mortar in 2018. John is continuing to look for opportunities to grow the business, as he believes the possibilities are endless.
His current project has been initiated with the purchase of a storefront property at 1535 W Devon by the Loyola University campus. As an alumni of Loyola, he is excited about bringing his cuisine to the community and hopes to open doors early this fall.
